
Nothing says “summer’ quite like watermelon. This watermelon salad is a quick & easy way to showcase this delicious fruit! It was actually inspired by my 5 year old who asked if I could make it! I had the gorgeous canvas of our homegrown Lettuce Grow fresh butter lettuce as the backdrop already. I happened to have all the other ingredients on hand as well (which is why I added hearts of palm, my kids’ favorite!) and pepitas (pumpkin seeds) for crunch and added protein and fiber! Our homegrown fresh organic mint made an appearance thanks to my 2 year old who picked some and handed it to me.
The hearts of palm we actually shipped from LA since it’s the only place I can find it in glass! (as opposed to a can) I’m still on the hunt for that on the east coast and hope to find it soon since that was our last jar!
This salad is so refreshing and light yet substantial with the vegan feta, pumpkin seeds and hearts of palm.
Watermelon Feta & Mint Salad
(Vegan & Gluten Free)

Ingredients:
- Watermelon, cubed
- Violife vegan Feta, cubed
- Mini cucumbers, sliced
- Organic Mint
- Optional: Hearts of Palm, sliced
- Optional: Pepitas
Lime Vinaigrette:
- Fresh squeezed lime juice
- Olive oil
- Maple syrup
Directions:
- Cut the watermelon into 1″ cubes
- Cut the feta & hearts of palm into ½” cubes
- Slice the mini cucumbers into rounds
- Combine the vinaigrette ingredients & pour over other ingredients
- Enjoy!
