
St. Patrick’s day during a pandemic means ☘️ shamrock shakes☘️ all around! But not just ANY shamrock shake… this version comes with benefits, is healthier and so insanely yummy! 3 adults and 3 kids (including the 15 month old!) LOVED it and together we devoured a huge pitcher of it!
This shake is made with spinach (that gives it the green color, along with vitamins A, C and folate), almond milk (I used my homemade sprouted almond milk, recipe on my blog), frozen bananas for natural sweetness, a date for a little sweetness with some trace minerals, avocado for creaminess and healthy fats and peppermint essential oil (which is great for digestion, and a delicious way to liven up dishes without adding sugar or artificial flavor… and because I was out of fresh mint, lol)!

I started with 1 cup of milk, but with the avocado it was a little on the thick side so I added more milk. I didn’t measure it, but I’m guessing it was about a 1/2 cup. If you like it extra thick, start with about a cup of plant based milk! Also, if you don’t have dates, don’t worry about it! Just add a bit more frozen banana.
The organic spinach I used was from a local farm we go to every week. Fresh and local is best! But you could also use frozen if that’s what you have. Use what you’ve got! 🙂
For extra fun I topped ours with coconut whipped cream, vegan rainbow marshmallows that are naturally colored and Matchaful matcha white chocolate shavings.

Shamrock Shake (Vegan & Gluten Free)

Ingredients
🍀 2 frozen bananas
🍀 1 cup spinach
🍀 1 Medjool date (or more banana)
🍀 ½ large avocado, pitted and scooped
🍀 1 – 1½ cup almond milk
🍀 ½ tsp vanilla
🍀 2 drops Young Living peppermint essential oil*
* Note: you can use a handful fresh mint leaves, if that’s what you have.
Directions
- Put all ingredients in a Vitamix or blender
- Blend
- Enjoy!
