Rice pudding was BOTH of my grandfather’s favorite dessert. When ever we went out to eat they would order it. I love it too and had it often as a child. Recently I had leftover brown rice. Not enough to make a stir fry or another meal, but the perfect amount for dessert! So, I turned it into rice pudding. Although I made it vegan, I have no doubt my Zadie & Grandpa would be proud. I couldn’t get over how yummy it was!
Ingredients:
- 1 (generous) cup cooked leftover brown rice
- 3 cups unsweetened vanilla almond milk
- ¼ cup raisins
- 3 tbsp maple syrup
- 1 tsp cinnamon
- 1 tsp vanilla extract
Directions:
- Add all ingredients to a pot.
- Cook on a low flame for about 45 minutes or until all liquid is absorbed (when cooled it will thicken a little more).
- ENJOY!

This is a Wonderful recipe for Post-partum in Ayurveda we call it the “first days pudding” and you can add CardaMOM to help bring back the energy in the digestion after giving birth…always eating it warm for post-partum…Grandpa had good taste!
