
This might be the best treat I’ve had all summer. And who doesn’t love shaved ice? Only make it with BENEFITS!
If you’ve been here for a while, you know that I LOVE desserts and all sorts of sweet treats. But I love them WITH benefits, meaning food that benefits your mind and body as opposed to food that will do the opposite – hurt or cause disease. Food truly has the power to heal you or hurt you. YOU get to decide what you buy and what goes in your mouth and body. Why not opt for food that heals and powers you to do the things you love with the people you love? (Food for thought: most diseases are caused by food and also can be cured by food. Think about that for a moment.)
This treat was a huge hit with my family, and has just a few healthy ingredients. 2 out of my 3 kids don’t even eat peaches (I have no idea why) but they asked for seconds of this dessert (and was literally their first time eating peaches!)!
My kids come home from camp every day asking for a treat and they just can’t seem to get enough this summer. I love that this is healthy, easy and fast and something you can feel good about eating yourself and giving to your kids! It has fresh organic fruit, healthy fat from the coconut cream and healthy protein from the pistachios!
It’s also a way to get the kids involved in the kitchen (kids make better food choices when they are involved in the buying and/or preparing of the food). This dessert was very spur of the moment and it was getting late (for a weekday night), but my 6 year old wanted to help make it, so I let her. She helped with the grating (which was challenging but she was determined to do it!) although I think she preferred adding the whipped cream while my 3 year old sprinkled the nuts on top!
The hardest part of this entire recipe (in my opinion) is waiting for the peaches to freeze. So just throw them in the freezer overnight so you don’t even think about it! That’s what I did.
This treat is so refreshing and cooling and yummy in this summer heat.

Peaches and Cream Fruit Shaved Ice
Ingredients
- Frozen organic peaches (I washed mine and froze them overnight in a stasher bag)
- Maple syrup (optional)
- Coconut whipped cream
- Chopped pistachios
Directions
- Wash, dry & freeze peaches whole (overnight)
- Shave frozen peaches with a zester or grater
- Optional: drizzle with maple syrup
- Add some coconut whip & chopped nuts
- Enjoy!
