It’s become a bit of a tradition for us to make cinnamon rolls and go to the beach on New Year’s Day.
Last year, I debuted a healthier cinnamon bun that was amazing. This year, I have another, totally different (raw but doesn’t taste ‘raw’) cinnamon roll to share with you. I love having treats WITH BENEFITS, and this one doesn’t disappoint.
Hope you enjoy!
No-Bake Cinnamon Roll

Ingredients
Roll:
- 1 cup oat flour
- 1 cup pecans
- 8 tsp psyllium husk + ⅓ cup water
- ¼ cup organic maple syrup
Filling:
- 1 cup organic Medjool dates (Optional: I soaked them in hot water while I was making the crust to soften them a bit)
- 3 tbsp organic maple syrup
3 tsp organic cinnamon - 2 tbsp water
- Pinch of salt
Directions
- Mix psyllium husk and water and let sit 5 minutes to thicken
- In a Vitamix or blender, blend pecans until pulverized
- Add all other crust ingredients and blend until a dough forms
- Scoop out onto a piece of parchment paper and form into a large thin rectangle, about 10″x5″
- Blend all the filling ingredients
- Spread the filling over the roll in a thick layer, leaving a half-inch of space on the shorter edges
- Using the parchment paper or your fingers, roll along the long edge to form a long skinny roll
- Refrigerate overnight
- Cut into ½” rolls
- Enjoy!
