Ingredients
- 2 cups fresh spring peas (or 16 oz. frozen organic petite peas)
- 4 sprigs organic fresh mint
- 1 clove garlic, minced
- 1 tbsp extra virgin olive oil
- ½ tsp Himalayan salt
- ¼ tsp black pepper
- Rice Crackers (about 20-30)
Directions
- IF using frozen peas, pour boiling water over them to defrost
- Add peas, garlic, salt, pepper and oil to food processor and blend
- Add the fresh mint and blend again until well mixed
- Top rice crackers with mint pea puree
- Garnish with a small sprig of fresh mint
- Enjoy!
Hi! Did this recipe make enough pea puree for the 30 crackers? Will it last stored in the fridge for a day or so or must be eaten same day it’s made? Thanks
Yes, makes 20-30, depending on how much you put on each (and how big your crackers are!).
It’s so easy/fast I’ve always just made it same day but it should keep just fine. The color gets a touch darker if it oxidizes. You can try a squirt of lemon to keep it a little greener, but I haven’t tried it personally.
