I’ve been obsessed with Dracula since I was a little girl (true story). I still have tons of Dracula books in the bedroom I had as a little girl and I’ve seen every Dracula movie you can think of from a kid on… yes, even Nosferatu, the original!
It’s a mystery why incorporating Dracula/vampires into my cooking took so long! :)=
I had no plan for dinner. We had just gotten home from a birthday party and it was dinner time and also ALL HALLOW’S EVE! I know my menu for tomorrow/Halloween (which is also fast and easy, and my kids request it every year: my vegan hot dog mummies!)
So… I made my skull pasta with this cookie for dessert!
It was so easy, fast, and I had all the ingredients on hand. I had a single leftover homemade vegan and gluten free cookie and started with that one. But don’t fret if you don’t have anything homemade; I also made them with Simple Mills vegan/GF store-bought cookies, too. (In fact, those might have worked out better since they were mini ones and it was close to bedtime. We usually don’t have treats like this so close to bed!)
The cookies I used were better than typical ones, the marshmallows I used were vegan (but let’s face it, pretty much just squishy sugar), the jam was JUST strawberries (no sugar added!) and the almond slivers boosted that fiber/protein factor just a tad! So… still a treat, but at least no red dye and (except for the marshmallows) no refined sugars.
The girls LOVED these spooky treats so much that they asked for more fangs (slivered almonds) and had fun putting them in their mouths like fangs and eating them by the handful. I love my little vampires. 🙂
If you make them, please tag me on social media so I can see too!
Enjoy, and HAPPY HALLOWEEN!
