Vegan Cauliflower Pizza Bites
Ingredients
- 2 cups (~ 1 head) cauliflower rice (process in a food processor until rice-sized crumbs, or use a cheese grater)
- 1 cup organic chickpeas, drained
- 2 tbsp coconut oil
- 1 flax egg (combine 1 tbsp ground flax & 3 tbsp water, let sit for 5 mintues)
- 2 tsp parsley
- 1 1/2 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp Himalayan salt
- 1/8 tsp ground pepper
Directions
- Pre-heat over to 450 F
- Spray or grease mini muffin tins with oil
- Heat the coconut oil in a frying pan over medium heat and cook the cauliflower rice until just browned
- Blend everything together in the food processor until smooth
- Spoon into muffin tins, filling until just below the top
- Bake 10-15 minutes, until browned
- Optional: Add vegan mozzarella and turn the oven to “Broil” for 2-3 minutes, until cheese starts to melt
- Let cool
- Dip in Marinara or pizza sauce
- Enjoy!
